Banana Pancakes ~ 2-3 servings

A beautiful pancake

Hubby decided he wanted his pancake to "smile"


Ingredients:

1/2 cup self-raising flour (alt: 1/2 cup plain flour with pinch of baking soda)

1/2 egg

1/2 cup milk (I used formula milk)

1 medium banana (mashed)

1 tsp olive oil


Method:

1.Beat the egg in a bowl. Whisk in the milk and flour to form a thick paste.

2.Fold in the banana.

3. Heat olive oil in a non-stick frying pan. When pan is hot, use a kitchen paper towel to clean off most of the oil. Dollop the batter into the pan and cook over medium fire for 2-3 min on each side, or until golden brown.

4.Served as desired.
