Chicken Stock ~ 5 servings; 2/3 cup each


Ingredients:

500g chicken drumstick (remove skin and fat)

2 tsp wolfberry (washed)

1.2 litres water


Method:

1.Pour 1.2 litres of water into pot and bring it to a boil on high fire. Put in the chicken drumstick and wolfberry and bring it to a boil. Lower to medium fire and let it simmer for 15-20 min.

2.Filter the soup and discard the wolfberry & chicken drumstick. (You can keep the chicken drumstick and shred it for adults’ consumption)

3.Leave to cool and pack into small packets, each 2/3 cup of stock.

4.For later use, freeze the packets of soup.
