Lean Pork Potato Cakes ~ 5 servings; 50g each





Ingredients:

2 medium potatoes

30 ml formula milk (alt.: regular milk)

25g pumpkin

25g cauliflower

25g broccoli

50g lean pork (steamed & blended finely)

Olive oil


Method:

1.Put potatoes in pot and pour in enough water to cover the potatoes. Boil until soft and fork comes out easily. Meanwhile, steam the pumpkin, cauliflower & broccoli in medium heat for 10 min.

2.Mash the potatoes and mix in the milk until a smooth mixture.

3.Mash the steamed vegetables lightly and mix well with mashed potato. Add in the blended lean pork into mixture.

4.Roll into small balls (about 25g each) and flatten the small ball slightly to form a cake (see "before" photo above).

5.Heat olive oil and lightly pan fry potato cakes until slightly golden brown (see "after" photo above).
