Healthy Banana Muffin ~ 6 standard size muffins + 8 mini muffins





Ingredients:

2 ripe bananas

½  cup Heinz Baby apple puree

¼ cup olive oil

½ large egg

½ cup plain flour (sieved)

½ cup oatmeal (blended until fine)

½ tsp baking powder

½ tsp baking soda

¼ cup greek yogurt



Method:

1.Line muffin trays with paper cups. Preheat oven to 175 degrees C.

2.Sieve plain flour and mix it with blended oatmeal, baking powder and baking soda.

3.In a separate bowl, mash banana then add in apple sauce, olive oil, egg and greek yogurt. Mix well.

4.Add the dry ingredients into the wet ingredients and mix until a smooth mixture.

5.Fill muffin cups three-quarters full.
Ready to go into the oven
6. Bake until the satay stick comes out clean, about 20-30 minutes. Transfer to rack to cool.

  2. Hi Kweely, sorry for the late reply. I use QUAKER Quickcook Oatmeal (no sugar). The tin is blue in colour.
