Shepherd's Pie~2 servings; 200g each


 
Ingredients:

2/3 cup homecooked chicken stock (option to use vegetable stock)

½ carrot (diced finely)

1 small onion (diced finely)

1/3 zucchini (skinned, seeds removed & diced finely)

100g pumpkin (diced finely)

100g chicken Breast

2 medium potatoes

Grated Cheddar cheese

1 tsp unsalted butter


Method:

1.Boil potatoes until soft. Mash with fork and mix in some unsalted butter until smooth.

2.Sautee the onion, carrot, zucchini & pumpkin until tender, then add chicken stock.
Add in chicken breast and chicken stock. Cook until stock is reduced but not dry.

3.Preheat the oven to 180 degrees C.

4.Pour mixture into baking dish & cover it with the mashed potato.

5.Top it with grated cheddar cheese & bake for 30-40 min until bubbling and brown.

6.Cool slightly before serving to baby.
